Hello all!
Last night while I was unpacking my groceries I realized I forgot to get the protein bars I usually get. Since I do not eat meat, I try to get protein in other foods. These protein bars are one way and it helps that they are really good! Just when I was thinking I would need to go back to the store I remembered a recipe I had that would be a good replacement.
Since I post recipes every now & then, I thought this would be a good one to share. It’s also very easy to put together.
NO BAKE CHIA ENERGY BITES
Ingredients:
1 cup rolled oats
1/2 cup peanut butter
2 tablespoons honey
2 tablespoons shredded coconut
1 tablespoon chia seeds
1/2 teaspoon vanilla extract
raisins or chocolate chips
Steps:
Mix all the ingredients together until fully combined.
Roll into equal size bites.
Store in airtight container in refrigerator up to 5 days.
Tip: If part way through it becomes sticky and difficult to roll them, just toss the mix in the refrigerator for a few minutes.
Enjoy!
(There are a few other recipes on my “Vegetarian Recipes” page)
That looks really delicious!
