Make pecan meatballs!

I have never been much of a meat eater and now I don’t eat it at all. It can be challenging trying to find recipes that I like because it’s not like I want to sit around and just eat vegetables. In fact, there are a lot of vegetables I don’t even like.

I must say this recipe is da bom!

Don’t worry guys, this is not filled with a bunch of vegetables. It is mostly, spices, bread crumbs, eggs, cheese, and pecans. You can see the inside of them is just as delicious looking as the outside.

Another great thing is if you don’t use all of the pecan meatballs, you can freeze the rest. You can get a few meals out of this recipe.

It took me all afternoon to make, but it is so worth it! Below is a photo of my dinner!

The recipe is on my “Vegetarian Recipes” page under the “Main Dishes.” I actually posted the recipe a long time ago. I haven’t done much with the page lately. As I mentioned, finding recipes I like can be challenging. Let me know if you have any good ones. Maybe I’ll even put it on my page.

If you try these pecan meatballs, and I hope you do, let me know how you like them. May I even suggest a challenge of making them for a meat eater without letting them know. Let them think they are eating a plateful of spaghetti & meatballs and see if they realize they are eating a “meatless” meal? This is how good these pecan meatballs are (in my opinion)!

(By the way, I didn’t make my own tomato sauce, I just used a can of it and added basil, salt & pepper)

    I went to your tab but don’t see the recipe!! You should make your own sauce! It’s so easy!! Just cook down some roma tomatoes (even grape tomatoes)………doesn’t take long, add spices, olive oil………..I do it all the time, delicious!

    They DO look yummy! But I am a meat eater. That’s the way I was raised; and while I look for leaner, healthier cuts, I doubt I will ever give it up completely. Especially since I’m married to a meat-and-potatoes kind of guy.
